Budokai 1 HD question
I just bought the american version of DBZ HD collection and I hear bloody Sean Schemmel on Budokai 1 as soon as I start playing, does Budokai 1 HD have the original JP voices?

Aside from the replaced Yamamoto score, updated graphics and achievements, the game is exactly the same as the PS2 version. Budokai 3, however, represents the North American "Greatest Hits" version of the game, which includes the option for JP voices (as well as the extra costumes and character portraits).

I'm using 'custom' OST from Kai and original Budokai on mp3, so only 3 has JP voices?

That is correct. The inclusion of that option wasn't a standard in Dragon Ball games in North America until that release.

I was more into Supersonic and Sparking! That's why I never got into budokai, thanks mate!

The European version has the Japanese voices, you can always import that.

And if you happen to have a Ps3 on custom firmware, it's actually pretty easy to restore the original music, provided you have a copy of Budokai 1 and 3.
