Just curious, was Supreme Kai ever referred to by his real name at any point during Super's run?

As long as I remember, no. The only use of the name Shin I can recall is in the manga chapter 28,when all the Gods are arriving at Zeno's palace and every God's name was displayed in panels.

I don’t think so, unless it was said in Japanese but translated only as Kaioshin in the subtitles?
I am quite sure we only know of Gowasu and Roh’s name for the other Kaiōshins from the show, although they gave us their names on the official website’s characters profiles for the ToP: https://m.imgur.com/a/j90rU
