What do you want to create? A video file, a new DVD you've designed from scratch, or a modified version of the original DVD? They're all doable, but the first option has much less of a learning curve than the other two.

These are clearly the same video masters from ~2009, with the Japanese audio keeping the original title card but leaving the credits textless. They even open with the 2011-era Funimation logo, which is a bit ironic given this week's news.
