What kind of being would be formed ?

If Doctor Gero had gotten cellular material from Broly from Broly's saiyan pod and integrate them into cell then years later cell had absorbed 17, and 18 and became perfect. Would this type of bieng be too much for the z-senshi to handle.

Basically would Perfect Cell with Broly's genetic material cause him to become unstable and more dangerous Would a being like that be unstoppable ?

Well, Cell kinda became more and more unhinged with the stronger he became. Throw in Broly's DNA, and you have a recipe for disaster.

Broly's DNA wouldn't have done a thing to Cell's personality, Broly's insanity isn't genetic. It's a mental issue caused by years of mind control and mental torture. Cell would probably be exactly the same with maybe a little more power, maybe Broly's DNA would have made Cell a little taller? Other then that yeah, he'd remain the same.

Maybe he'd have more Saiyan-like features than the Cell we know, since adding Broly to the mix would mean that his DNA would be even more overwhelmingly Saiyan-dominated? Gero's robots apparently decided to pass over Trunks due to already having a lot of Saiyan DNA, so I guess this would be a "what if they hadn't?" sort of thing. Might also get a boost in power just due to how strong Broly is, too -- nobody else that he had DNA from was already hovering in the "Cell Games level" range of power, after all.

And he'd probably be able to go into that bulked-up stronger form he used against SSj2 Gohan after being pummeled a bit without slowing down in the process, since it seems like that's basically what Broly's "Legendary Super Saiyan" form is -- a version of "Ultra Super Saiyan/Super Saiyan Grade 3" without the slowdown and energy-drain.

Don't know if it would make much of a difference in the end, though, considering how far ahead of him Gohan seems to have been once he went SSj2.
