I'm a fan of King Chappa's fighting stance. Yamcha's was also creative. A lot of the rest are pretty generic.

Goku in the Budokai, etc series is always great. I also really like Vegeta's in Xenoverse, which looks like the one in the picture Nejishiki provided above.

I will also admit to liking one that I made for one of my characters...

I'm a big fan of Freeza's elegant stance. It shows how powerful and confident he is in that he's almost inviting you to come at him, but it doesn't even look like a battle stance. However I'm sure that, in that abstract "superhuman martial arts beyond understanding!" way, it's actually a perfect stance with zero openings.

I always liked the stance Goku takes against his second fight with King Chappa during the preliminaries during the 23nd TB. I like it because it's not really a stance at all, Chappa even comments as what kind of stance and accuses Goku of mocking him. However, after mastering the "quiet as the sky, faster than lightning" training from Mr. Popo, Goku is in fact in complete control of his opponent and easily defeats him.

Of course, the iconic pose against Vegeta is also another favorite of mine
