Oozaru would probably make not much difference. While destructive, again, Yamcha and Roshi in the manga found a way to stop it on the fly.
I think you are right on most of what you've said except this, Yamcha beat Goku just because Kid Goku when he is hungry he becomes weaker, when they have a rematch it is specifically said by Goku that this time he will win because he already had breakfast, and he beats Yamcha quite easily, from that point on Yamcha never tries to take him out one-on-one.

Goku joining the RR army is interesting, it would certainly be more convenient for him than facing off against the likes of General Blue.

Personally i don't see it as a inconsistency of the plot, more like the Saiyans are arrogant and underestimate the Earth, it's not the first time, after all Raditz was suprised by their ability to increase their battle power, there are many techniques and weird things from Earth that the aliens are unaware of and they even learned from them (Vegeta copied their ability to sense Ki, something he never saw before), it seems Earth was more advanced fighting-wise than what the Frieza Force was led to believe.

But here's another matter: We know that, according to Karin, the divine water brought up Goku's potential that he sensed was dormant inside of him, this potential is manifested in an Oozaru symbolic image both during the time Goku is having his power awakened and during the King Piccolo fight at the end, so the question is: Did Goku's hit in the head partially supress his Saiyan potential?
