I don't see this happening with the use of the existing Z footage. If they went the 10th Anniversary Dragonball Movie route, maybe, but it seems like they're not up for that at this time. If anything I'd be okay with just the Buu arc getting the Kai treatment in general, but obviously, we'll see.

Eric's acting I think is of the same quality as always, that being good. The voice is what's irritating, but I'm assuming it's because that's just how it's "developed" over time and through all of the recent video games. At the same time though, it's not THAT different than what it used to...
