There is plenty of way to beat those characters

Even Zen'Oh for instance Dark Schneider from Bastard!! licence and also one of the strongest Shueisha character ever made can oblitarate Whis easily. I do believe that Saint Seiya characters and or Sailor Moon characters can beat most of Dragon Ball characters. Also Kami Tenshi, Demonbane and the Super Tengen Toppa Gurren Lagann can beat Dragon Ball universe with one shot.

As for a fanmade OC I created a Saiyan who can access 8 energitical transformation, 3 biological transformation, 2 spiritual transformation and 1 transformation making him nearly omnipotent. I even have a original character that have his power based on creation by imagination making him omnipotent and can blast even The One Above All & The Presence from both Marvel & DC Comics.

Lemme try.

My fan character, Xarol (who I totally did not just conceive in the last 30 minutes) has an ultimate, invincible transformation called Super Duper Saiyan Black Evolution -- which is a whopping 50,000,000X multipler of Super Saiyan Black -- which itself is 600,000X times stronger than Mastered Ultra Instinct.

He has an ability called Light Destroyer, which is a combination of destruction and creation energy. Using this super duper technique, he was able to overpower both Zenos in a wrestling match.

Oh and I forgot to mention, he beat Gohan Blanco and El Grande Padre in 0.2 seconds. (I'm so sorry, couldn't resist)

The point is, the strength of a fan character is as strong as the fan in question wants. The sky's the limit.

I bet that Ultra Instinct Fused Zamasu would stand a chance at the very least:

Or if that's not enough, how about Super Saiyan 4 Fused Zamasu?

Still not enough? Well then, surely a fusion between Fused Zamasu and Zen-Oh will work?

At his core Zamasu is good like Shin, though I guess you could say he was so fastidious that it backfired. But you know, for this "Future Trunks Arc" you had to depict Zamasu and Trunks' inner conflict, right? If this was back when I was drawing the manga myself then I doubt if I could have done it. I mean, I'm not very good at depicting the characters' psychology on the page. So this all came together because now I only have to think up the story. [...] On my own, I doubt I would have been able to express Zamasu's fall to the dark side.
