I know that Vegeta said he wants to go his own route, away from Goku, and that he wants to end up mastering SSJ Blue Evolution, and Spirit Control and what not. But then why did they tease Vegeta getting UI earlier in Super? It doesn’t seem to make much sense.
What do you guys think? Might he still get it at some point in the future? Afterall, if anything should help get you UI, it is definitely Spirit Control! Completed Ultra Instinct is achieved in a very, very similair fashion, by gaining “self control” through a giant shock to your emotions. If anyone should have control over his emotions, it would be someone with a very high level of Spirit Control! Such as Vegeta..

This bit of exposition is a tease for UI itself, not specifically Vegeta's attainment of it. Bringing attention to the mind of the reader that UI might be a thing to look out for. Yes, the conversation is with Vegeta, but nothing about the conversation suggests Vegeta is particularly positioned to do it. Much like SS2 in the Cell arc.
By the way, I'm not reading the manga, but is Spirit Control different from controlling your spirit? That fundamental stuff Goku learned long ago?

Hatska (the assistant to the Yardratian master Vegeta trains under) says that Goku called “spirit” “ki” when he visited, so all signs point to it just being a difference of phrases, and what one learns on Yardrat simply being (much) more advanced ki control, along with unusual applications for it.

Vegeta is his own person. Ultra Instinct represents the first time that a fighter's mentality is more important than their genetic profile or power level. What is optimal for Goku with happy-go-lucky carefree demeanour won't necessarily be the same for Vegeta.
