Those are amazing.

But I've always wondered what the process is to making these levels. I've seen so much done, how hard is it? How customizable is it?

You can draw materials on to the screen, essentially, then trim them down to size and shape. You can adjust all sorts of things like movement speed, etc. It's basically a GUI-interface game programmer. But to make something like this must have taken a lot of patience.
