If he disrespects those individuals, then I don't think he should be calling it the justice of the gods since that is what they have been doing for eons now. Going by the anime version, its one of the worst arcs in the series imo. I'd probably rate it above the Revival of F arc but definitely not over any arc in the original manga, not even the Pilaf arc. Compared to GT, I can't say since its been a long time since I watched GT and I'm due for a rewatch....

No, just knock him out. But if circumstances were different and he had no choice, I would say yes. It was to show Goku's determination at getting that fight, perhaps to even also save the remaining people at the Tournament.

I don't, Zamasu's characterization is horrible imo. I don't mind more complex takes on characters, just make their justification more reasonable.

There was an interview where he said Tien wasn't interested and Launch eventually left after living on his and Chaozu's farm for a bit. But, given how comments by Toriyama tend to be forgotten by whoever's writing, including himself, I hope to see it happen. I don't think it would be "off"...
