I think one of the biggest exaggerations by fans is in regards to Yamucha's "badassness" and usefulness in Dragon Ball, and how Toriyama ruined him in Dragon Ball Z. To me, he didn't add much of anything past the first arc. I liked him best when he was comic relief in the Cell arc.
