If you're referring to when Vegeta said that Boo is immortal before he blew himself up, that's more of a figure of speech for someone or something that is so powerful they might as well be invincible or unkillable, and from Vegeta's perspective, Boo was. During the Saiyan arc, Piccolo asked if Nappa was immortal and we both know that he wasn't.
