It's not so much that as the anime having two hours go by while, say, Goku and Freeza stare lovingly into each other's eyes, occasionally cutting away to show the peanut gallery clenching their glutes and staring at Goku and Freeze staring at each other. Or, hey, you could cut away to King Kai recapping for the dead peanut gallery things that supposedly happened less than ten minutes ago. lol Oh I see so everyone complains that there is too much talking in the Anime. Well there's not enough action in the Manga. It's a funny process. Most people started watching the US Anime, liked it, and decided to watch the original, so they switched to the Japanese Anime, started getting "smart" and trashed the US Anime. Then people went back to the Manga and now they trash the Anime itself. I don't know, I choose not to disrespect the greatest Anime I've ever seen.
That's kinda true. The staring contests, at least the less extreme ones, actually manage to build a decent amount of suspense (the music helps a lot here), and don't feel that horribly bad. It's the pointless filler scenes cutting to character not part of the action either doing something incredibly insignificant or giving us some generic "this is bad" comments on the stuff we just saw that are painful.
I have a feeling that most of the people that are bothered by the "too much staring and talking" have just watched it too many times. It never really bothered me the first time I saw DBZ (it still doesn't, except for the Freeza fight really..) but other than that it wasn't so bad. I think it's just the more you see the series the more you start to think "just get to it already."

As mentioned, there are a few fights that the Anime does better, like Piccolo vs. Freeza form 2. It fleshes out stuff that makes things more interesting, like the bar fight scene during the rainstorm that postpones the 21st Budokai. Or the scenes that flesh out training segments more thoroughly were always an aspect of the Anime that I enjoyed.
Goku's training is always shown in greater detail in the anime, and many times it is very interesting. Strengthening his tail before the 22nd Budokai? Also remember Son walking miles on his hands, and pulling those boulders up mountain paths to increase his strength? All good stuff. The additional scenes and training methods of both Korin and Kami? Who could forget Gregory, and all that mallet smashing goodness. I'll never forget the look on North Kaio's face when Son smashed his convertible by accident! All were excellent uses of the Anime to flesh out the story more.
We've harped on the bad, and there are some shining examples from the Anime that I really enjoyed a lot and felt truly added to the story in many ways. That ought to help this topic get back on track.

My Fiance and I have been watching DBZ. For her it's the first time. She loved the Saiyan saga but now we're at the Freeza fight and I think she's losing interest. Can't say I blame her. It's frustratingly slow going...

I'd actually argue the opposite. I think people just coming to the medium for the first time would be pretty taken aback by the sheer amount of blah blah blah blah and pan-across moments in DBZ. Hmm, I guess that's true. Maybe it just doesn't phase me that much. I was into the anime first and then the manga, and while I can't really say I missed the dragging out of some of the fights, I did miss the few things that the anime built a little bit further on. (Minus the plot-hole filler such as Piccolo destroying Goku's spacepod and whatnot.) Don't get me wrong, I love the manga, it's probably just because I saw the anime first that it took me a little getting used to.

There are a couple things that both do better then the other. Here are some of the fights I believe are better in the Anime.
Piccolo Vs Freeza: The fight was just back and forth, and when Piccolo took off his cape, he beat the crap out of Freeza.
SSJ2 Goku vs Majin Vegeta: The fight was much longer, and they both actually landed hits on each other. There was even good dialogue in the battle.
SSJ Trunks Vs Mecha Freeza: Not much of a fight here. It just looked better, because Freeza was struggling the entire time
SSJ Trunks Vs #17 (Future): This was another battle that looked much better in the Anime.
Goku's transformation into a SSJ was also better in the Anime. There was much more into the power-up.

The Anime fights seem to COMPLETE the fights that are hell of short in the Manga. Example...Vegetto vs Super Buu...Goku vs Majin vegeta....etc. I just like the Anime overall, it has what the Manga got AND MORE.
Anime > Manga.
Anime > Manga.
