Goku's manipulative attitude, it is interesting considering he's a guy who doesn't comprehend things like love and family.

I guess that's one way to interpret it. I don't think that's what Toriyama was going for though. There's no personal gain for Goku and it's for the greater good to get Vegeta to work with him/fuse. Goku brought them up because that's the only incentive for Vegeta. I think it's just meant to show his growth from how he didn't care about his family in the early Cell saga to willing to put aside his pride for them now.

I'm not sure how any of those prove Goku's a manipulative character. Goku not knowing about kissing is just a dumb gag. I don't think it's meant to go beyond that. Goku's pointing out that he surpassed Vegeta was after Vegeta implied that Goku couldn't handle another year. It just seems like a friendly comeback and likely something we've seen between rivals in other series. If we dig deep enough, literally any harmless random scene could be interpreted to have a deeper, hidden meaning but it doesn't mean the author intended that. Dragonball is meant for children so the story is supposed to be simple and straightforward. I don't think Toriyama is going to have these subtle hints about Goku's character that the general audience would never pick up on.

The kiss thing was for the thread, and I don't see it as just being dumb gag, for Goku to deny ChiChi such simple moment of affection throughout whole marriage is pretty terrible, but the amount of salt it created makes me laugh.

I think you're using a very broad definition of manipulative. If this is just your headcanon, that's different than claiming this is what Toriyama intended but only for certain fans to pickup on and not the general audience. Goku tells Uub that his main objective is for a rematch as they're flying away so Goku wasn't trying to manipulate Uub at all. I believe Goku was telling the truth about also wanting Uub to protect the Earth just that it wasn't his main reason and it came second to wanting a rematch.
I'm not sure how you came to that conclusion from the kissing scene. I interpreted it as a nonsensical gag because it makes you wonder how they had two kids together but never kissed. I'm pretty sure this scene is implying that Goku didn't even know what the act of kissing was since he questioned what Mai and Trunks were doing with their lips.
