The way I see it, the only substantial plot point that Vegeta's gender provides is Trunks. Bulma would send Gohan back in time. With one less son to raise, she'd probably have time to send him back before 17 and 18 bury him. Cell may not have had a chance to hijack the time machine, since Gohan may have been too powerful for him.
Without Cell, 16 would have been the ultimate antagonist of the saga and either have been destroyed or beaten enough to restrain and reprogram.
Without the Cell Games, Goku would be the first one to achieve Super Saiyan 2 and maybe Gohan would follow suite if Chichi allowed him to train. However, I think Vegeta would achieve SSJ2 before Gohan, since I don't imagine ChiChi letting up on his education that much and Gohan would not be able to release his anger so casually (well, as casually as training usually goes compared to watching your friends get mauled before your eyes by little blue freaks).
On the other hand, Goku's survival may do Gohan and Vegeta's powers some good, if he achieves SSJ3, somehow pushing Vegeta even further and Goku may just persuade ChiChi anyway, saying that they need to be ready for anything with the same sentiment as when he dismissed trying to revive him after the Cell Games in the canon series.
Going with the latter Seven Year Training outcome, Fat Buu would have been annihilated from the start, regardless of gender dynamics, parenthood, or variety or children.
