We're not told how long it was. It could have been days, weeks, months, years, whatever. We never see him actually with the arm in future, if you go by the manga. If you go by the anime Gohan managed to fully recover without any Senzus (he gave the last to Trunks) so it was probably a few weeks at the least. Which is still longer than Cyborg Freeza was around. Or Raditz, or Nappa, or... well, you get the idea.
Yep. And we know that several characters have three costumes. Characters that already had three from the last game(s) and some that are getting new ones this time. I've seen screenshots of Videl with her pallete swap from BT1/2 and ones of her with pigtails. We don't even know what any of Arale's, Blue's, #8's, Akkuman's, Nam's, or any of the other new (non demo) characters alts look like. Unless you go by the manga in which case he never fought with both arms. Ever. And beyond this, fighting one armed is not only pointless, it's stupid, when you have both of them. Maybe. Maybe not. We didn't know all the costumes for other characters in BT1/BT2 until we had the game.
