My Changes:

The Saiyan Saga could instead be about Raditz, Vegeta and Nappa coming to recruit Goku to help overthrow Freeza (Maybe they learn about the truth of what happened to Planet Vegeta).

Maybe get rid of Kienzan (as TFS noted, it was pretty much an "I win" button that would ruin the story, and leave too many "idiot ball" moments)

After the Freeza Saga, I'd have done a DCU style 52, focusing on several key arcs, like Vegeta's search for Goku, Goku's adventures to Yardrat as well as the gradual restoration of the dead Z-Warriors.

Give King Cold a Bigger role. This was one of the worst instances of "wasted potential" in the Dragon ball universe, seeing as he was described as being potentially more powerful than Freeza, but got killed quickly.

ETA: Not have Mr. Satan take all the credit every time the heroes deal with a threat.

When Trunks and Gohan were flying to Cell's time machine Bulma found, I wish there was a flashback to Trunks's time and when he found Future Gohan's corpse, triggering his Super Saiyan powers to be unleashed. Like Gohan brings up how he was a Super Saiyan in Trunks's time and trained him until the very end and Trunks confirms it, explaining their friendship and fights against the Androids. He then says that Gohan's death wasn't (entirely) in vain since Trunks was able to become enraged enough to unlock the Super Saiyan inside himself. This is because I feel that Trunks would mostly likely take note that he was with his best friend in the past and we'd see this.

Another thing in the Manga I'd change is Trunks finding Future Gohan's corpse and become a Super Saiyan like in the Anime Special. In The History of Trunks special, this change was brilliant since Future Gohan was Trunks's best friend and teacher and Trunks had been struggling to go SSJ. This all culminated when Trunks found the dead body of Future Gohan and caused him to ascend. I really wish Toriyama thought of it himself.
