Id place anime ssj blue Vegetto(Ft arc) above Beerus IMO, since in the manga kaioshin says he probably surpassed Beerus and there is nothing contradicting this in the anime. While Fused Zamasu is close to Beerus in power.
Also, seems all GoDs seem to be in the same tier of power, with skill being the difference between them.

In accordance with the latest Episodes and Spoilers, could the combined strength of Hit and Kefla be enough to overpower Champa and potentially overthrow him if such a decision is made ?
Or it's still early for it and they need get stronger to be able to overcome him ?

No cause he could hakai them. Kefla should be far weaker than vegito blue who MIGHT be GoD level and Hit is nothing in terms of raw power compared to a GoD

One of the previews mentioned Kale triggering a new form do we know what that is?
Going by Dragon Ball Heroes, Kelfa is just using the ordinary Super Saiyan form in the preview for the next episode. Perhaps Super Saiyan 3 then? Would make sense.

I think she either goes ss2 or ss3 in episode 116 but apparently goku just avoids all her attacks and hits her point blank with a kamehameha

In fact, my headcanon on the matter for now is that Ultra Instinct Goku wasn't actually as strong as Jiren when he fought him, he just closed the gap enough that using the Ultra Instinct allowed him to keep up and actually do damage, since gaps are much bigger for what will and won't affect a fighter nowadays.
This is mostly predicated on how well Jiren was managing to keep up, with no indication that he himself uses the Ultra Instinct, as well as how well Beerus was doing against the other Gods of Destruction while using the Ultra Instinct.

Oh yeah. Jiren raw power is still far above UI goku. He only charged up his ki when he blocked goku punch at the end

Impossible to tell right now, but I think it’s unlikely. We had only seen Kafla beating a battered SSG Goku and these characters you mentioned are at a level above a full powered SSG. I think it's still early to set this, but SSB Vegeta is stronger than SSB Goku (without the Kaioken)?
In Future Trunks Saga, Vegeta clearly outplayed Goku after training on RoSaT.
Then, about a year has passed since these events and apparently the two continued to train, as we saw in the double episode of Goku's murder (Vegeta was training with Whis).
Later, Vegeta entered the RoSaT again and his current strength is unknown. But considering the previous events, is he still stronger than SSB Goku?
He is apparently competing with Toppo (even though he is not releasing his Ki yet), and Toppo may be on the same level as Goku SSB Kaioken.
I believe that SSB Vegeta> SSB Goku for now

I was thinking of posting this in the non thread discussion but felt like this was a better place to ask. What criteria do you guys use to determine who is stronger than who and where they are at? I wanted to ask because there was one comment saying that Piccolo is stronger than Mystic / Ultimate Gohan from when he sparred with him back in the recruitment episodes but I don't know about that...when I watch videos of, Maximilian Dood for example, I'm not going to say the buttom masher is better than he is definitively just because the button masher got lucky and won.

true but my thinking is that goku and vegeta base forms are far above caulifla and kales base forms like a seemingly massive gap, in which case base vegito > ssb goku assuming god to blue isn't some huge multiplier ( in the manga its less than 10)
