As it was already noted, the previous canceled releases were all due to being replaced with a future release: Dragon Ball on VHS with the DVD release, and the UUEs with the season sets. As there's nothing to replace the Dragon Box, there's no reason to cancel it.
Plus let's not all forget how much money FUNimation probably had to throw at Toei to get these masters. Zero people could buy the Dragon Boxes, and they'd still have to release all seven to make their investment worth it. The FUNimation of 2010 is not the same FUNimation of 2005, their actions and decisions actually seem logical now.

However, Kai is marketed toward a different audience - the Dragon Boxes are intended for fans of Z in either language that have been in it for the long haul and eager for a presentation of the series in the best possible format, while Kai is geared more to a completely new audience or people looking for a shortened version. Fans introduced to the series through Kai or prefer Kai to Z probably wouldn't hold any interest to the Dragon Boxes, though I'll admit it's not quite the case vice-versa.

I think the UUE were cancelled because of the season sets. They decided to that mess instead.

I think FUNi probably dished out some dough for the Dragon Box masters, so canceling the release and not making money off it would be a dumb move. They'll sell them and make a profit regardless of how small it is. I doubt they'll cancel but I wouldn't be surprised if these are the last Dragon Box releases we see.
