The only reason Vegeta seemed to want the immortality was to defeat Freeza. After that he didn't ever showed desire to gather the Dragon Balls again. Or even to dominate/destroy Earth/Universe. Vegeta goals seemed to simply become the strongest guy ever. For that, it don't matter much where he is. Also, in Earth he can train under a gravity over x100, thanks Dr.Briefs. And, as mentioned, he had a pretty girlfriend. Even if he didn't care for her at that point, it is still something he has on Earth has that he wouldn't elsewhere.

To put simple, Vegeta stayed on Earth 'cause he haven't any place better to go.

Which does raise the question of why Vegeta was still hanging around on Earth with Goku dead and cold. I like to think that Vegeta's obsession with surpassing Goku twisted into him deciding he would be a better protector of Earth than Goku was. Since the Dragonball universe is constructed to shit on Vegeta, however, his first attempt to protect anybody led to his death, the deaths of the Z fighters, and the world descending into hell for a couple decades.

I think it was still his aim to become a Super Saiyan and surpass the level of strength that Goku had achieved. And anyway, what else could he do? Freeza and King Cold were dead, thus so would the planet trade organization. Vegeta didn't even work for Freeza anymore. I doubt he wanted to gather the Dragon Balls and become immortal, since I think his ego wouldn't let him cheat his way to becoming stronger than Goku.

...Or he stayed to fuck Bulma.

He didn't move to save her when #20 attacked her. I can barely wrap my head around how those two had sex and concieved Trunks in the first place.

I guess what I'm finding hard is the series of events that led up to it. But, I guess, that's normally the case with any unusual relationship, even in real-life. I find it hard to imagine how Gohan was concieved, but with that, I can just imagine Abridged's explanation of it. As Rocketman put it, Bulma was horny, Vegeta was horny, they fucked. And that's probably obvious by the fact that it was a one-off, since Vegeta didn't move to save her and Trunks from #20's attack and Bulma still thinks Vegeta's a jerk.
