Basically my favorite stuff is the character themes really. Vegeta, Trunks, Mr. Satan, Cell, and Buu all had some great theme music, Gohan and Goku got a few as well. Ginyu Transformation and SS Transformation/SS3 Powerup are both awesome as well. I like Uub in the Tournament and DBZ Finale for sentimental reasons, those were more touching pieces than anything else in the soundtrack I think.
If I had to pick one absolute favorite though? Probably Vegeta - Super Saiyan.

SSJ Themes in general. Its hard to choose between Vegeta's SSJ theme, SSJ3 theme, SSJ theme, and SSJ2 Gohan's theme(With violin).

I don't know really know who made except that it's from one of the English dubs. I must say I really love these SSJ Vegeta, Vegetto's theme and my most favorite Kid Boo's theme.
I just took the names from the video titles, I don't know if it can be said that they are the characters' themes.
I know, on the other hand, that Kid Boo's theme is indeed played when they fight him on Kaioshin's planet and it fits it amazingly due to its relentless nature which goes along Kid Boo's character.

My favorite is the Super Saiyan 3 theme.
When I was a wee lad searching on the internet to find DBZ music, one of the first tracks i found was this theme, and I was just blown away.
After a while I got bored listening to it, but recently i rediscovered it, and now its more nostalgic than "OMFG THIS SONG IS AWESOME!!!"

To be perfectly honest, I couldn't care less about the fans a re-issue might alienate because if all they're concerned about is being able to scalp the people who were either unaware of the Dragon Boxes or couldn't afford them at the time, they're just leeches and deserve to have their greed backfire on them.

If I had to pick one it would probably the Super Saiyan 3 transformation. But to be honest, I don't like the Faulconer score at all. To me, it just doesn't really feel like Dragon Ball; it doesn't have that feel to it that the Kikuchi score has...
