If they wanted to do this, I'd personally make it into a documentary using the voice actors, director, etc. where they discuss those fights and then for bonus footage, put in the entire fight (minus some irrelevant scenes in between).

Yeah, but that takes significantly more effort than throwing 7 episodes on a disk and calling it a day.

That's all these need to be, though. They're just little reminders for casual nostalgics that the series exist -- something cheap and simple enough to be an impulse purchase at a box store and to possibly prompt someone to buy one of the larger sets down the line.
