Interestingly enough, if memory serves, Chou/Super Dragon Ball Z has the highest amount of female fighters thus far that we know of.
Battle High 2, starring Kyle Hebert as well as myself, has been released on Xbox 360, OUYA, PC, Linux, Mac, and Xbox One!

Well, since I actually have now played any number of DbZ games, I can give my $.02...
SuperSonic Warriors: Tie
Kuririn - He's got a lot of variety across all 3 of his levels
Goku - Same reason as Kuririn. I love the "L" = Instant Shunkan-Ido thing.
Budokai 1 - Trunks. Big Trunks fan period. Too bad he got shafted in SSW, though.
Buu's Fury - Gogeta. 'Nuff said.
...And that's all I have to say bout that.

I've always loved playing with Tenshinhan. Him being a playable character was one of the main reasons which made me buy Ultimate Battle 22 back in 1996 (I didn't have a Saturn at the time so I took the Playstation game).
Nowadays, I enjoy playing with both Tenshinhan and Yamcha. I also loved Yamhan, I hope they'll bring him back someday. Tenshinhan wasn't a really good character in Sparking! though.
I don't really like how they're being portrayed as "comedy" characters in Shin Budokai. Tenshinhan never was a funny character nor a coward.
Apart from those two, I also enjoy playing with:
Goten (he was great to beat "Kid" Buu with in Budokai 2);
Muten Roshi (UB 22, Shin Butôden, Sparking!);
Kid Goku (UB 22, Shin Butôden, Budokai 3);
SSJ 3 Goku;
Mirai Gohan (Sagas... They should put him in Sparking Neo);
Recoom (Budokai 2 & 3).

Yeah I dont like how Tenshinhan and Yamucha are always made so weak in fighting games. I mean in Budokai 3, Mr. Satan has more moves then the both of them. I mean, what the hell? Thats the problem I have with Dragon Ball Z is that Yamucha and Tenshinhan aren't in it much at all. I have not played many dbz games but...
Budokai: Cell, I dont own this game but I played it at a friends house and won the world tornament like 8 times in a row fighting as cell.
Budokai 2: Gohan, this was like the introduction to Ultimate Gohan and I was like OMG Gohan is so awsome.
Budokai 3: Goku with gogeta capsule because... well Gogeta is awsome
Budokai Tenkaichi: Trunks (w/sword) I just like Trunks, I dont know why, he's just plain cool.

I have played most Dragonball related games but I'm not going into depth like that!
Most of the characters have the same styles in the game anyways.
So I will just cover the Budokai series on the Playstation 2.
Budokai - Mirai Trunks, when he transforms with long hair it looked cool!
Budokai 2 - Kid Buu, he was so fast and powerfull to his '' I'm going to eat you up'' counter part.
Budokai 3 - Goten, so quick fast with a simple transformation. Liked his blue clothes.
Tenkaichi/Sparking - Goku, normal form. Liked the way you could activate King Kai fist.
