As seen with Garlic Jr. and Future Zamasu, when a Dragon grants immortality, this means the immortal's body is impervious to every form of damage. You cannot vaporize every atom of an immortal to kill them - they just poof back into existence somehow. Maybe the Dragon is creating a new body in that case.
Basically, an immortal in DBZ, if made so by a Dragon, is impervious to all forms of damage. Yes, you can make a hole in their body. But they regenerate in an instant. The only methods of defeating an immortal are by trapping him or wishing him to be mortal again. And doing the latter means running the risk of the immortal having an entire year to run free.

Go back to the present, wait a year. Then, find the Super Dragon Balls and wish that Zamasu had never existed. Since the Super Dragon Balls supposedly have no limits, the timeline should simply correct, rather than split.
If we assume that the Super Dragon Balls can't do that, then we wish for Zamasu to die. After that, wait another year, and wish everyone from the Future back to life.
