Actually let's question Beerus' motives for a sec. I get it that being a GoD is quite the thing, but what other privileges does he enjoy other than not doing his job lol...
Why doesn't he want Goku or Vegeta to take his position (which they won't)? I get him not wanting Freeza to be there, but what about them?
Why is a rematch going to happen? Hasn't Beerus acknowledged at least Goku as a superior fighter, or does he simply say what he says to flex his insignificant title and strength?
Frankly, he is an amazing character but has so many flaws with how he acts...
So my thought is that we will probably never get a rematch and the closest thing to it will be Vegeta vs Beerus in the Manga and the 2nd episode from the Universe Creation arc of Bing Bang Mission in SDBH.

For me, a rematch is not an absolute must.
I don't expect too much motives behind the battle besides who has the biggest tail or ego, i wouldn't like the idea of bringing back Beerus as a main antagonist, it's backwards writing as he simply does not fit that role anymore.
But if that's the reason why the writers keep Beers completely uninvolved in battles (he is passive from nature, but still, he has to act to save his ass at a certain point), to keep it a 'secret' untill the rematch happens, i'd kinda prefer it happened when Goku mastered UI at the latest.
