The thing with that is that EoZ is clearly written as though Kid Boo is the strongest guy Goku fights, not Beerus or Whis or Zamasu or anyone else that's coming up: Kid Boo, that's the last guy who gave Goku a good fight in 10 years and Oob is specifically reincarnated from Kid Boo so Goku can relive that glorious battle. Its a whole lot less glorious now that fucking Piccolo can probably beat up any version of Boo.

Because that whole segment isn't written as "Oh! Goku's excited to fight because Oob might potentially get that strong like Freeza did!" no, the manga is written as "Kid Boo was Goku's greatest battle and Oob can become that strong and Goku will help him to recapture old glory."
If Goku learned of Oob's potential five years prior to their battle and after all this God shit is over then made the reincarnation wish for Kid Boo to become Oob, you'd be right, but as it stands, the story treats Kid Boo as Goku's greatest fight and now he's worthless to him when he's got much more powerful opponents around.
When someone tells you, "Don't present your opinion as fact," what they're actually saying is, "Don't present your opinion with any conviction. Because I don't like your opinion, and I want to be able to dismiss it as easily as possible." Don't fall for it.
