When he was a villain, the most his character was was a whiner. When he became good, he became a Piccolo-clone.
Your understanding of 2 vs. 3 dimensional characters is also lacking. We know what makes Vegeta tick, he has demons, he has contradictions, and he changes over the course of the series. In what world is that not a 3 dimensional character?
