Probably Trunks going SSJ in the special. Gohan going SSJ2 is close second, as is Krillin saving 18, but Trunks scene is the most definied, set-up and has the biggest weight of them all (due to Gohan's permanent death, no DBs reducing the stakes). Cell saga with all its plot issues is DB at its peak cast-wise. Super an incredibly long way to go to even get close to Saiyan/Freeza/Cell sagas level.

To stray away from popular, well remembered moments, I'd like to nominate Tenshinhan and Yamcha going at it in the Shindo animated episode during the 22nd Tenkaichi Budokai. The animation and art direction is really unique and a great call-back to old school martial arts.
I couldn't just pick one or two, so my third would be Arale and Goku against Tao in the Mystical Adventure film. The animation and artwork is just gorgeous.
My favourite art style (and animation) outside Toriyama who worked on Dragon Ball: Katsuyoshi Nakatsuru, Masaki Satō, Minoru Maeda, Takeo Ide, Hisashi Eguchi, Katsumi Aoshima, Tomekichi Takeuchi, Masahiro Shimanuki, Kazuya Hisada
