No he doesn't make himself angry again, he loses control again. The point of the scene is that he did calm down, you can see it in his expression. But he loves his father so much, even after what he went through, that he worked himself up back into a frenzy to keep fighting.

Yup, they would go for/teased a nice character development. Imagine if this Broly had some "oh right! What am I doing?" and started at least talking a bit more (because there's that too, once the fight starts, all you can hear is screaming)... The way I saw that scene was Broly's devotion to his father. Throughout the movie we see he loves him despite everything, defending him when they talk smack about him, and even going Super Saiyan when he sees him dead. I agree, that's exactly how I see it. Goku was effectively getting through to Broly, but Goku critically underestimates just how devoted Broly is to Paragus. I think what was worse was that in deriding Paragus as a bad guy, he carelessly lumps him in with Freeza, whom Broly has no genuine affiliation towards. That's the trigger that sends Broly back over the edge. I don't get the idea that giving Broly more lines after this point would in any way aid his character or the plot. The point, as far as I see it, is that Broly has absolutely nothing to say to Goku or Vegeta, especially after his Oozaru beast mode takes over. This is not his fight. He doesn't bare the same grudge against Vegeta that his father does, and doesn't know this Goku person at all. His only motivation for being in the Arctic is to make his father happy and the only way to do that is by fighting these "bad people" at his command. Even though Broly eventually goes ballistic, his body language screams that he doesn't want to lose control. He's a highly conflicted character and this scene does a great job of externalising that, but it all comes down to the fact that while Goku's words as 100% true, Broly can't yet let go of his father's influence.
If Broly suddenly had some kind of emotional breakdown and had a therapy session with Dr. Son, it would be laughable and anticlimactic. Paragus has literally been there his entire life, for over 40 years they survived on an inhospitable alien world with no one but each other for company. That kind of loyalty is almost impossible to break, which is why Paragus simply had to die. In comparison, Broly has only "known" Goku for about 60 seconds and that was the first time he'd actually gotten close enough to hear Goku speak to him. It speaks volumes to how good Goku is at reading people that he makes Broly hesitate at all.

I think the old Broly has a more interesting backstory. It manages to be tragic, while also demonstrating just how barbaric Saiyan society is. While the old Broly is a far less sympathetic character compared to the new one, his backstory manages to be more disturbing, without feeling like it only exists for shock value. Also, I find Paragus’ dynamic with Broly in Movie 8 to be more interesting than their dynamic in the recent movie. Instead of simply being an abusive father who uses his son as an instrument of revenge, Paragus is understandably terrified of his son, and is forced to use a machine to control him.
With that said, I do think the new Broly has more potential as a character moving forward. After Movie 8, the old Broly was relegated to just being a generic brute who more or less only says one word. Sure, the new Broly so far hasn’t been very talkative either, but his relationships with some of the other characters does seem interesting enough. Also, I suppose I’d say that I prefer his design over the old one.
All in all, I’m kind of split on which version I think is better. For now, I guess I’ll say I prefer the old one, but that could change if we see more of the new version.
