DBZ had manga source material they followed and expanded on. That's completely different to making basically a new anime out of nothing.
64 episodes is still plenty for original series.

GT doesn’t exactly leave the door open for a sequel. It has just about the most definitive ending you could ask for in Dragon Ball. What would a sequel even be about? The adventures of Goku Jr., Vegeta Jr. and Puck?

The sequel would be set before the 100 year timeskip. Like maybe five, ten years after the battle with the Evil Dragons Goku returns somehow and then blah blah blah just go from there.

As
MyVisionity already said, it's not like they are obligated to make a sequel set one hundred years in the future, and it's not like Goku couldn't come back (they would have to bring him back, imagine if they make a series without Goku... It would be the doomsday of humanity!).

Isn’t that basically what
Dragon Ball Absalon did? I don’t see what the point would be in doing a sequel to
GT. It would only serve to cheapen the emotional impact of the ending.

What is "Dragon Ball Absalon"?
Well, I don't have any strong feelings about it, if they want or not to make a sequel to Dragon Ball GT, I would be okay with whatever they decide. Though I'd very much prefer to adapt Dragon Ball Online instead.

Absalon is a fan-animated series. It's... a lot of effort clearly went into it, but it's not something I can remotely get behind in terms of its direction, style, animation, or pretty much any other aspect of it. It's not for me. But it has its fans.
Dragon Ball Online... Didn't that give us the thing about Boo reading some porn, making a woman version of himself, and then making a child to start the Majin race?
The point of Dragon Ball is to enjoy it. Never lose sight of that.

Yes. It took a game to make something useful out of that subject within the Dragon Ball context.
