Kame Sen'nin means something like "Turtle elder". Sen'nin is a sort of mythical status, like a super-enlightened taoist master who can circumvent age and such.
As for the rabbits on the moon... it's a Japanese folktale, basically. The "man on the moon" in the west is a rabit in parts of Asia... and it makes ricecakes. XD

"Hermit" is a valid (and very common) translation, sure. On top of what caejones explained, a sennin is supposed to have shed their worldly desires and attachments, so they live alone somewhere remote, content in their enlightenment and wisdom. Don't the DVD subs use "Turtle Hermit", not "Kame Sennin", though? Or did they change that for the blue bricks?
