I don't think it would differ much from the Funimation dub. The whole point was to "adapt" the series to an American audience.

I don't see the problem with it.
Maybe it seems off to you because it's one of the few moments where the characters actually act smart and use everything they have at their disposal instead of choosing the dumbest and hardest route to solve their problems

It's highly unlikely that Toei would make a series that renders Super non-canon.

The anime isn't something I ever thought to revisit in full, but the movies are good for a rewatch and Super does a good job of serving for highlight/clip fuel at least.

I don't remember exactly, but I think animes like Gundam from '79 or the '80s have good audio quality, also because they're from Sunrise, and that company did preserve the good audio for decades.

This has nothing to do with "mono" or "stereo". Only GT and the last two movies were even mastered in stereo. All of original DB and Z have only ever been mono. All that means is it just has one single audio channel, so no directionality. It has no impact whatsoever on the clarity of the sound ...
