I think Toriyama just liked writing the characters at their Buu arc ages and didn't show a big desire to go into the time that GT takes place. We even see him go back to Buu arc AGAIN with Daima.

Well, GT is the only one of the 3 that's actually a sequel, the other 2 are side stories taking place before EoZ so GT wins by default. The end.
