Do Japanese home releases of DBZ come subbed? Do you fans of the original Japanese buy Funimation's home releases to watch the subbed version?

No, Japanese releases have no English subtitles. We rely on FUNimation where we can and use other means where needed.
That said, I think a lot of us buy Japanese releases, regardless. They tend to be a lot nicer from a collector's standpoint.

Do Funimation's releases have the original Japanese opening/ending songs and insert songs? Hell, why doesn't the "English with Japanese Audio" track on the orange bricks have the Japanese songs?

Lately, I just wait for the FUNimation release. It's usually about the same time, and it gives me the English track for when we have non-Japanese fans over. Also, I prefer the dub's actor for Jaco.

The Japanese versions on FUNimation's Brick releases are untouched, audio-wise(AKA insert songs). Video-wise, they don't contain the Japanese credits on the opening and ending animations. I can't speak for the Orange Bricks, but the Blue Bricks(Dragon Ball) are shown with a clean opening, while the ending theme has FUNimation's internal credits(dub actors, video editors, Gen Fukunaga) and a truncated, "general" translated version of the Japanese staff. It should be noted that each episode has its own individual credits on the Japanese DVDs. Secondly, the title cards are the English dub versions, even if you're watching it in Japanese. Thirdly, FUNimation's releases of DB only have the first opening animation and the second ending animation. From my understanding, Dragon Ball GT's Green Bricks work much the same way in how its credits work, with the added bonus of FUNimation replacing the original GT logo with their own, shiny metallic version. There's no video animation missing and insert songs all play on the Japanese versions.
FInally, none of the Bricks have the original next episode previews.
