Not a original topic but what is his real or as you would like, 'canon' skin color?

That is how the Daizenshuu lists their skin color, so there's no reason to doubt it.

That is the official stance on an official guidebook. It says that saiyans are yellow, while humans can be white, yellow, brown, etc. Nothing else contradicts this information and there's no reason to doubt it.

It seems like Toriyama treats his skin color a bit like the color palettes of various clothes and hairs of the series; causally inconsistent. Though officially it seems like "yellow" is the answer to your question.
