Multiple universes worth of new challengers, and he settles with the reincarnation of a lesser foe at this point? That's the main reason Goku even bothered to take up Uub as a student. He wanted to ensure a worthy adversary because Buu gave him a heck of a fight, and was at the time, his strongest opponent. Here comes Beerus, and everyone else. Who needs Uub? Perhaps they'll explain why Goku still insist on training Uub, and whatever happens to Whis and Beerus, but until then, I'm still scratching my head at this.
Look at Freeza. He was one of the strongest beings in the universe when they first fought him, but he is literally trash compared to God Goku. Then look what happened when he trained for the first time. Imagine the potential that Oob has after training.
There's no way of knowing whether Uub's potential power is greater than Frieza, nor do we know the limits of these new characters, or whether more will show up with maybe greater potential than Uub. I also preface that they may end up explaining that in the future. As of right now, they haven't.

Freeza said his father told him to stay away from Beerus or Majin Buu. Uub is the latter reincarnated.
I think that's a pretty good sign of Uub's growth potential being immense - especially since Goku takes him to train while he's still a young boy.

And even if that wasn't the case, Goku was bored. All the universe stuff could be long over. Uub was his best shot in EoZ.

EOZ might not be fully retconned - for example, the tournament probably happens and Pan takes part in it. Bra is probably born, with a date that settles the debate between exactly when she is born (so far it looks like Bra is at least 1 year younger than Pan, maybe more). Pan might be a bit taller at Super's version of EOZ if she is a little older - she would be around the same age as Uub.

Uub was mentioned in Super as having already been born (though is still a newborn at this point).

Uub probably has the same power as he had before (around Kid Buu when fully realized) but Goku is able to take a hit from him because if he went fully god-tier at the tournament he might have killed Uub by mistake!

Goku stays in base for the entirety of EOZ, right? Although, if he can go Super Saiyan, it's already shown he is able to go gold after achieving SSGSS. He probably has control of his ki and how much ki he puts out - there is no reason why he couldn't lower his power level to allow Uub to have a shot at hitting him. This might also be why he goes regular Super Saiyan against Botamo, in case any of the Universe 6 fighters can sense God ki. Why reveal your full power? It could be a strategic move on Goku's part.

So in short, EOZ happens but probably with some differences - Pan might be a little older, or it occurs sooner from the defeat of Kid Buu, or other minor things, but the basics are probably true. They mentioned Uub, which tells me that he is not being retconned, so there will be a time Uub grows old enough to fight and Goku decides to train him because Uub is close to the same age he was when he first started to learn martial arts.

GT is absolutely retconned though. I will bet on my left knee that GT cannot happen as things stand now with Super, unless a dramatic change happens that confuses the hell out of fans or something.

There is something about those Super dragon balls. I have a feeling when the wish is made, it might have some unforeseen consequences.
