I know, but a lot of people just watch Z and Z's battles is not as advanced as early Dragonball, so they don't see the adaptations of Goku's fights.

When it comes to fighting and battle, Goku's arguably a genius. That's been shown many times throughout the Dragon Ball series. When it comes to... well... almost everything else, he's not quite as intelligent. I think some are getting those traits of his mixed up, hence why there is some surprise that Goku was "smart enough" to adapt to Hit's techniques.

Cabba fighting on par with SSJ Vegeta. Even base Vegeta should be able to kill Cabba with a poke
Toyotarō: … I get the feeling I’ve just heard something amazing (laughs). Lord Beerus and Whis turn up in Dragon Ball Super, and have become an unsurpassable wall for Goku and the gang. What do the two of them mean to you?

Toriyama: Well… First off, right now I don’t have any plans for Goku and Vegeta to surpass Beerus and Whis.

I saw the original Dragon Ball series as well as Z multiple times. I do have an understanding that many fights in Z are less "martial artsy" but they do have their moments occasionally. Personally I loved the fights between Yamcha and Tien in the 22nd tournament, and Goku vs. Tien in 23rd tournament. Tien is an awesome fighter with great posture and technique in Dragon Ball and I wished he had more shining moments in the Z series.

Both watched and read everything. I know Goku but there are characters who are shown to have more fighting experience than Goku. Like Vegeta, he has probably been in countless more battles than Goku before they fought each other.
"Lord Beers, what are those?? Do they taste like root beer?" ~ Goku

His experience pails in comparison to Goku and the results shows. It's like playing a game for 20 hours. This guy could be the highest rank possible and his competition is somewhere down the middle. Not everybody learns/adapts the same.

- Goku outfights Tien multiple times in 22nd TB final and nearly won despite lack of flight and even power
- Goku outsmarts tien in 23rd TB rather easily
- Goku outsmarts PICCOLO in 23rd TB finals
- Goku outsmarted freeza twice in their battle
- Goku, even after being significantly weaker than suppressed cell, nearly killed him and forced him to use barrier

- Vegeta flat-out said goku was way better fighter than him
- Whis said goku always is a step ahead
