What is so interesting about them?
I don't like Post -Namek Goku, likewise with Post-namek Saga Vegeta.

What is so interesting about them?
I don't like Post -Namek Goku, likewise with Post-namek Saga Vegeta.
What i like you might hate it what i find interesting you might find it boring so it is all a matter of personal taste. I think Gokuu and Vegeta are still good characters and if utilized properly in Super everybody who is complaining will start praising them again.

Sounds to me like everyone wants a spinoff show since none of the Z fighters are gonna change or develop anymore.

I'd agree with that sentiment. If the characters don't have anywhere to go, the story has run its course.
