Why did Bulma say she hasn't met Goku in 5 years?

Because the new stuff wasn't a thing back then.
A world without Dragon Ball is just boring.

Like everyone else has said, new material retcons some of the 20-year-old material.

You really shouldn't be worrying yourself too much with how many retcons are going on in DBS. It's not like Toei really cares about that as some fans do. I mean, Future Trunks' hair is now blue for crying out loud. It's all old material that's been changed in the new material.

Given the lack of a Dragon Ball canon with any sort of guideline, nothing's actually a retcon until Toriyama plainly says, "I'm changing what happened, and now this new story counts instead." Until then, it's just an inconsistency, and I for one hope it stays that way, because Dende forbid this badly-written dung pile of a series ever replaces or supersedes the original story.

Yes an no. The term is retroactive continuity, not retroactive canon. While there's no properly defined canon, and thus Super is not factually stated to be undeniably included as "canon" with the manga, anime or whatever, you don't need a defined canon for a basic concept like continuity.

In Super's continuity (until we reach a point were we learn whether or not the End of Z will be rewritten), new established facts are retcons of the previously known information. This applies to Super's continuity and Super's continuity alone for now, not the the wider franchise. In the DB manga and DBZ/DBK anime, Bluma hasn't seen Goku in 5 years. In Super, she has.

The ending of Dragon Ball is one of the most mediocre (at best) things to happen in Dragon Ball in my opinion . Whether it's part of the manga or has Toriyama's name doesn't matter to me. To each their own though
