This does bring up a good question, if the Super Dragon Balls really can grant any wish you want without the limitations of the other sets of Dragon Balls, why didn't Zamasu wish for the Omni-King to be his servant? If Super Shenlong really is omnipotent, that would suggest that even the Omni-King would be powerless against him. Of course, that would also beg the question of why no one would ever use the Super Dragon Balls to become the absolute ruler of the multiverse.

Immortality already confers invincibility if the dragon is the one making you immortal.
Other characters can't die from natural causes, but can still die via murder or suicide.
But if a dragon makes you immortal because you wished for it, NOTHING can kill you. AT ALL.
As seen with Future Zamasu, even stabbing him does nothing.
