But we've seen several times in the series Goku can eat at incredible speeds. What if Goku ate Cell's legs after he blew his torso off? He took a while to regenerate from that one.

Eating some genetically conglomerated hodgepodge of slug, ape, and lizard people with the exterior features of an insectoid would set a new standard for being uncomfortably peculiar in this series. Wouldn't it technically constitute as being cannibalism since Cell is partially Saiyan? How would he even go about accomplishing this when his bites are dictated by power level?

In the series Yuuki loss is tied to a drop in ki, so when Goku starts biting into Cell, Cell will most likely go into shock for a while and lower his defense enough for Goku to chow down.

Any cell still existing would mean he could regenerate. So I think he'd regenerate inside of Goku and rip him from the inside...

Do you mean "eat" as in absorb? Or literally eat? Because if it's the latter, nothing will happen. And if it's the former, he's actually pulled something like this off in GT and he became insanely strong for a very brief period of time.

But Cell's a pretty sneaky guy, I'd imagine he'd find a way to survive, like leaving a small piece of him outside or regenerating inside of Goku.

If he can regenerate from a full power Final Flash and Kamehameha. Then yes, yes he can.

Doesn't work like that, Cell would be able to avoid being digested I would think.

Although, as amusing as having little Cell's running around Goku's stomach trying to escape death, it wouldn't be needed since we already get to experience that with Goku and Vegeta consumed by Super Buu.

As long as he has one Cell, he can regenerate and since he has Piccolo's cells, he can stretch his arms and legs I guess.

My guess would be Goku would be exploding and then when all the mist/smoke disappears, Cell would be stood there. Now, that would be an interesting sight to see.
