The colours are pretty amazing along with Goku's nose. Well, aside from Trunks' hair, Toriyama himself is using the anime colors now. I doubt it. I'd put my money on the show ending before they go past Z. That would mean including Oob and other post stuff, which it seems they want to stay far away from. Not to mention the refusal of letting characters grow up. I am certain the timeline will be kept ambiguous and we're never leaving the gap. Bra will be lucky if she's ever born. I wouldn't be surprised if part of the reason we haven't gone past end of Z is because Toriyama wasn't sure how long this would last. Toriyama started writing the Trunks arc before the Champa arc even aired, so it still wouldn't have been clear then and even when he started writing the next arc he might not have been sure, but by the arc after next (which he has probably started work on) he'll have know full well from the beginning that Dragon Ball is staying. If the promise is the tournament I wouldn't be surprised if it's the last arc before we go past Z, in fact that be a nice little way to end Super's status as an interquel.

Part of the appeal in DB to me has always been the aging process and the story events taking place at distinct times in characters lives. I sadly think youre probably right though.

That's an awfully strong statement. Firstly, they're being real vague on how much time passes. Regarding Pan, she does seem to be a focus in the down-time, but that's all. Even if she is being built up for something, who knows what it is? Toriyama is notorious for not thinking things through. So if he's responsible for any build-up that Pan has gotten, it could lead nowhere, it could lead somewhere after the show's been on for 10 more years, or it could happen in the next big arc. Either way, to say that it will definitely happen is far-fetched, even assuming that Toriyama is responsible for Pan's role, which isn't substantiated in itself.

We all can assume that EoZ won't be the same after everything that is happening, so it will be retconned or something, it's hard to think that Uub will be able to reach the god tier with a little training being a human.
