Rebellion against the Gods
There have been some hints about the mortals rebelling against the Gods in Super. Beerus claiming that the life of mortals holds no significance in a battle of Gods, Beerus making Vegeta his personal servant and him being the one who ordered planet Vegeta's destruction, Goku's line to Hit about them being pawns in a game, Zamasu showcasing the Gods' evil, the Omni-King simply blowing up the entire multiverse and now this tournament where universal destruction is being risked. If Super doesn't finish with some kind of rebellion against the Gods, it's a lot of build-up thrown to the trash.

Before the Zamasu arc I couldn't imagine this being something Super would tackle, but after that I kinda find it actually more likely to happen than the tournament ending.
Also, if there is a rebellion, I would not be surprised if Beerus and U7 actually starts it, because of U6 being destroyed. I don't think filler showcasing the U6 team is randomly being put there just before an arc where universes get destroyed. Also we know Beerus does care about Champa so if Zeno were to do something to him I don't think he would take it lightly.
Of course not all Gods of Destruction would be in on it, so we can expect some to side with Zeno either out of fear or hierarchy, leading to some of the new characters finally going all out in a fight for once. Hell, with two Zenos we could see one on every side too, Future Zeno who isn't friends with anyone being a brat and Present Zeno being convinced by Goku that destroying stuff for the fuck of it isn't really the right way to rule the world.
There's potential here for greatness. Let's hope it's tapped into.

Gods are shown to be real dicks in Dragonball..

That would make sense, a god, zamasu, had the foresight to see mortals are a threat and his zero mortals plan was indeed the right thing to do here..

I doubt it'll mean much, a lot of these instances are anime exclusive and consistency/foreshadowing isn't exactly a forte of DB, I don't think it'll amount to anything.

Foreshadowing isn't a DB strong suit, but going back and picking up on loose ends and unexplored plot points to create new stories somewhat is. Cell? Bebi? But I'll believe it when I see it. Super loves to have certain things get brought up or shown then nothing to come of them. Namekian Book of Legends, Mai shooting Black's earring, Kibito and Kaioshin using DBs to break the Potara,...

The whole idea implies that only 1 universe will survive so my idea is that Zenos want to limit their work by reducing the.....area.
99.9% the winning team will have a wish granted by Zenos and Goku's wish will be to spare the other universes.
I can see team 6 and team 7 collaborating in team matches to secure that they will win.
Hit and Goku combo is near.
I also wish for a Vegeta to team up with Magetta and him been pessimistic and requesting Vegeta to apologise

I'm almost 100% sure none of those things you listed were intentionally implemented to build up to anything. I mean, it'd be cool and would serve as a nice conclusion to the series... if this was DBZ. But it's Super, where the powers and dominance of these gods are used for gags or support only. Literally a minute after Zeno destroys Trunks' entire universe, which was what they worked so hard to save, Goku gleefully returns back to it to present a gift to his new buddy, the guy who just vaporized the damn universe. And let's not forget how Beerus ordering Frieza to destroy Planet Vegeta was treated as a gag, rather than a plot point to develop Vegeta's character and relationship with Beerus.

I can imagine a history that after the tournament, the universe 7 is the winner and goku,beerus and champa will seal zeno with the mafuba, the angels will remain neutral and Yamcha would be the new ruler of the multiverse.
