I don't think they'll have this epic fight just yet. While I do believe Jiren and Hit will have a showdown at some point, I think the big fights will be at the end. They're kinda getting rid of the weaklings right now so the real fighters can decide their fates. So I can see there being a showdown with U11, 6 and 7. Each only having a few fighters left. Hit will job to Jiren to showcase how strong Jiren is. That's classic Dragonball. The former big gun being effortlessly taken out by the current one.
Jiren seems boring to me though so far, we haven't seen him say barely any words since he's been introduced. We've seen enough quiet stoic guys in the world of Dragonball that we don't need more.
I can see him and Vegeta having a great match, but the writers might even give Vegeta the ability to overcome Hitto's time skip technique and give Vegeta the victory after a hard fought battle.
Historical evidence always points that the former main rival to Goku is almost always outshined by the new one, and I don't see this pattern being ceased to appease your thousand year Assassin.

Honestly this battle royal mode is not very good for great battles. A tournament where all universes would battle each other one after the other would be better. So my prediction now based of Heros and some thought of how the series works.
The end will be Goku and Frieza vs Jiren. Beerus will go crazy about protecting eachother...they dont need to eliminate Jiren they need to survive.
Goku and Frieza will be too prideful and Frieza will be eliminated setting up the real final battle.

Goku vs Jiren will most likely be the headlining event of the tournament but I don't think it'll be the devisive one. I just can't shake the feeling that there'll be a big game-changing twist before everything plays out completely.
And there's still the matter of the Frieza/Frost secret alliance and Frieza's plotting against the Gods. Maybe Frieza encouraged Frost to sneakily take out the fodder from U7 to increase the odds he'll win while avoiding 'friendly fire.'

Say for instance Bergamo knocked out 60 people alone, making him the MVP. How many knockouts he had makes no difference if he gets knocked out and his universe loses. They get wiped out on the spot.
So it's essentially the last man standing. If there are 2 U7 warriors and 1 U11 warrior left, U7 wins. So if Goku and Jiren fight each other and Goku wins, I see Frieza knocking Goku out of bounds so he gets the wish.

I definitely don't agree with them, given how Goku's Kamehameha alone fared as well against Fused Zamasu as Vegeta and Trunks's combined Galick Gun did in literally the same damn arc where Vegeta apparently surpassed him. Then Goku would be training and fighting the other U7 guys while Vegeta would be looking after Bra and getting rusty.
