There is only the problem of it making sense afterwards, on why these people with infinite potentials haven't left goku in the dust yet..

In-universe I'd say it's because Goku trains and fights almost non-stop and basically lives to get stronger. Nobody else but Vegeta and maybe Caulifla do that. Trunks was keeping pace with Goku up to SS2 and now Gohan is knocking on his door with just a little intense training from Piccolo. Potential is just a plot device to keep other characters relevant. Meta-wise it's just because Goku is the main character.

Future Gohan trained way more than the lazy present Gohan did and yet he was not even close to 17.
Present Gohan trained 3 years with ssj Goku and Piccolo yet he was far behind them.Then he did not even train for a full year in the HTC and derp he was way stronger than both of them.
Keep in mind all of those happened in the same saga.
Gohan and Buu could have been training all those years and they still would be as far behind them as they are now.
Potential never meant anything outside of a plot device way to justify fast gains,Gohan's potential was like that,Freeza's potential was like that and thats how all future potential will ever be.

It's been years, it's okay to make progress..
This however did help, future Gohan's bad increases were blamed on it being his future self and maybe some differences there, the second theory was him not getting a good enough teacher to teach him to grow fast..
I suppose this same explanation can be used for these new big potential characters as well..
Cauliflowa and others are progressing fast because they have the right teacher as of now, the moment they are left alone, they don't manage to make gains as big..

I think you guys are misunderstanding the potential infinite ∞ thing (but that could be me) that they put there, what I initially took it for is that it refers to the saiyans as a whole and not just a certain character, whats written when Kale popped out was ''surprising (but not just your regular SURPRISE MF! but surprising as in tremendously surprising to the point of making the heavens go WOW that moves the earth)'' the trailer was full of hype about the saiyans as a whole and how they're this incredible race thats gonna fight each other.

Whether or not he's referring to Goku's power or ability to push a person's patience to their limit is up for interpretation, because based on what Champa was asked, I'm not sure it makes sense for him to respond with an answer about Goku's power. That's why I added the other quotes for context.
Ki Breaker makes a very good point. Gohan and Buu still have their potential, however, their growth was stunted because their not warriors who devout time for training. Caulifla appears to want to push her limits, so if her potential is "infinite" then it doesn't make sense for her to not be massively stronger between long periods where we see her. However, this could be executed logically if she suffers an injury, is placed in a coma, etc. I also agree that just because they messed up in the past doesn't mean they should keep doing it until we're numb to it. Yes they're all Saiyans, but when one Saiyan is singled out as being hyped with infinite potential, I would hope that that means something. I hope so much that Caulifla will show us Ikari and they will give us in an in universe explanation... Somethign they failed to give during Zamasu arc.
The transformation itself isn't the problem but the handling was piss poor
