I ve noticed with lots of other media, that canon is something that keeps changing, and personally, I'm not fan of new canon stuff (Goku being selfish, and having Superman origin, rehash of old ideas and even stuff from fanfics) and stick to original manga/anime, new Broly and Beerus/Whis might be only good thing in new canon.

There is also Bardock, original Bardock from TV Special was same one that appeared in manga, since Toriyama liked movie so much. I also don't like, how they completely changed how time travel works, in original manga/anime, when you go back in time and change things that supposed to happen, you create separate timeline, Super completely miss that part.

Matters to whom? Certainly not to me. And that continuity you said isn't even the only one within the "main one". Others would prefer the Dragon Ball Super manga instead, for example.

Continuity is this imaginary line where events take place. Goten_jr already posted an example of it, the order of the events constitutes a continuity.
Canonicity relates to an "outside event" being acknowledged (or not) into a continuity.

But in Dragon Ball, where you claim "everything is canon", then the idea of canon is literally meaningless. Just because you can technically make an in-universe justification for something being a part of the universe doesn't mean it makes a meaningful contribution to the story or characters. What happens to Goku in one timeline doesn't happen in another, and if those timelines never interact, then it doesn't actually matter if that timeline is considered "canon" or not.
All people are actually able to discuss is continuity, so you splitting hairs on whether the timeline where Goku shills for KFC can physically exist within the Dragon Ball universe is a worthless distraction when most "canon" conversations are about, for example, whether the End of Z is still a forseeable outcome to the universe Super takes place in.
It's the fandom equivalent of starting "is a hotdog a sandwich" discourse when people are arguing Togo's versus Subway.
