They spent all those years training on Uub's home island, not Kami's sanctuary. They only went up there for the "graduation" battle, where Goku and Uub could go all-out without fear of damaging any cities or portions of the Earth. As for movie villains in GT, yeah, Coola was the only movie character whom had an appearance, a cameo at that. Garlic Jr. also gets a sort of hidden reference in the holy-purifying water used in his DBZ saga being used to cleanse Baby's victims. I'm not sure why such a big case is made out of "movie characters in GT" to the point where it's greatly exaggerated in being a prob IMO, since Haiya Dragon also appears in a couple (non-Garlic Jr. saga) DBZ episodes and those aren't automatically considered "non-canon!" with the anime. Coola (though only as far as his movie 5 appearance), in addition to Garlic Jr., was also specifically included in a Daizenshuu anime timeframe, so his cameo is not a big deal in the context of viewing GT as canon material with the anime and not the manga.
From my point of view anyway.
As for Vegeta knowing how to perform fusion, while DBZ movie 12 obviously has to be non-canon, he does comment on knowing of the dance when Goku wants to pull it off in the DBZ anime after they've reverted Super Buu back to his "Evil Buu" self. This may've been anime-only and despite not seeing the mental-Goten-&-Trunks performing the technique, it's very possible he watched in on Goku via some anime-HELL means as he taught the boys. This anime viewpoint contradicts with movie 12 too, where he seemingly had no memories of his time while being dead, neither mentioning Goku's SSJ3 form or knowing how to perform fusion.
