Would you want a Tournament of Power video game?

Sparking Zero barely scratched the surface of the Tournament of Power. It just had the magical girls, Toppo, Jiren, Dyspo, Bargamo, Aniraza, the Saiyans, Frost, and Hit.

Imagine a full game that adapts all the fighters of the Tournament where you can choose your own team.

Not really, but I think a Tournament of Power mode that is similar to the Tenkaichi Budokai/World Tournament mode (but with the ToP rules applied) would be interesting to include in a main Dragon Ball fighting game like Sparking! Zero.

The F2P/P2W mobile game Dragon Ball Legends has a Tournament of Power mode but it's not like the Tenkaichi Budokai/World Tournament mode from the Budokai and the Sparking!/Tenkaichi games.

That stage would get boring quick
I'm already bored of staring at it in every new game that releases. It's disappointing, but ToP had probably the worst looking tournament arena in the entire series. Just a bunch of rubbles in a weird green background.

Haven't touched Sparking Zero but TechExpert2021 is right:

IF it wasn't introduced before, I could've seen it. Maybe making it a 2D mode that you can switch between characters of that specific universe would be another unique take on it.
I have a Dragon Ball: I have an automated recommendation servers:
