For me everything is Canon GT Super Daima even games like Dragon Ball Xenoverse Dragon Ball Heroes or Dragon Ball Online the Original or Canonical timeline of Super is not the Original since that should be the timeline of Future Trunks or Cell timeline i see it that way maybe thanks to the time travel of Future Trunks and Cell a temporal paradox was created my Headcanon is this
GT Universe or Toei Anime Universe
The Bardock 90s Anime Movie is Canon in this Universe Original Dragon Ball and Original Dragon Ball Z Anime with all filler episodes are Canon Movies like Super Android 13 Cooler Movies The History of Trunks Broly The Legendary Super Saiyan Movie Bojack Unbound Fusion Reborn Wrath of the Dragon are Canon after Wrath of the Dragon Movie then Toei Peaceful World Saga happens the last episodes of Dragon Ball Z then GT Anime happens and the timeline ends with GT Movie A Hero Legacy
Super Anime Universe
Original Dragon Ball Anime without filler Dragon Ball Kai Anime but Bardock intro doesnt happen Dragon Ball Daima i will take it as Canon in the same timeline as Super for now Dragon Ball Super Anime the Super Movies are Canon but maybe they happen differently Peaceful World Saga happens but it will be different from the Toei version of the 90s with an alternative version of how Goku will meet Uub after Super
Super Anime Movie Universe
All Dragon Ball Original Anime without filler and Kai Dragon Ball Z OVA The Return of Son Goku and Friends Dragon Ball Z Battle of the Gods Resurrection F Super Broly and Super Hero
Manga Universe
All Dragon Ball and Dragon Ball Super Manga written by Toriyama and Toyotaro
Akira Toriyama Universe
Everything that is strictly made by Toriyama including Spin Offs like Jaco the Galactic Patrolman or Arale Toyotaro and future stories not written by Toriyama do not happen
Daima Universe
In case of Daima being an alternate future a different timeline to Super could be on the list
I wanted to include the video games but the post would be too long and the other Dragon Ball Movies that dont fit with GT or the Super Canon occur in their own Universe or Dimension

I guess you mean a multiverse like in Marvel where there are different timelines and realities. That we know is true of Dragon Ball because you have different timelines explored in the artificial humans arc and Future Trunks arc of Super, but canon is something different entirely although fans have always tried to apply it to Dragon Ball.
Canon is a western concept that dates back to the first and second centuries when the Catholic church tried to find out what books were inspired by God as there was a lot of forgeries at the time. It was never a consideration for the powers that behind Dragon Ball because Dragon Ball is a Japanese property and I'm not sure if there is an equivalent of canon in the Shinto religion.
